Description
Easy Tiramisu is built from layers of ladyfinger cookies briefly dipped in strong, cold espresso to avoid sogginess, alternating with a thick filling of mascarpone mixed with beaten egg, sugar, and whipped heavy cream. The filling can be adjusted for consistency, ranging from richly thick to a lighter creaminess.
The dessert is assembled in a baking dish in three layers, then chilled for several hours or overnight to allow the flavors to meld and the texture to firm up. Just before serving, it is dusted with unsweetened cocoa powder or sprinkled with chocolate shavings to add a slight bitterness contrasting with the creamy sweetness.
This tiramisu delivers a balanced coffee flavor with the smooth, velvety mascarpone filling complemented by the mildly sweetened cookies. Serving it cold enhances the texture and refreshing quality.
Alcohol such as marsala wine, brandy, dark rum, coffee liqueur, or vanilla can be optionally added to the mascarpone mixture to deepen flavor. The dessert stores well refrigerated for a few days and can be frozen for later use, thawed slowly before serving.
Ingredients
- 16-20 lady finger cookies aka Savoiardi
- ¾-1 cup espresso strong cold
FOR THE FILLING
- 1 large egg room temperature
- 1½ tablespoons granulated sugar
- 1 cup mascarpone room temperature
- 1 cup heavy cream or whipping cream with at least 30% fat content
*For the replacement of raw eggs, you can try using a product called Egg Replacer or there are now pasteurized eggs available. Or you can leave it out completely, if you do then substitute powdered/icing sugar for granulated sugar.
Instructions
FOR THE FILLING
- In a large bowl beat together the sugar and egg until frothy, then add the mascarpone and cream, beat until thickened, make it as thick as you desire, some like it thicker and some creamier.
- Place the cold coffee in a large enough dish so that you can easily turn the cookies, be sure to just turn the cookies once in the coffee and do not let them sit in it or they will become too soggy.
- In an 8x6 inch (20x14cm)* baking dish place a dipped cookie (one at a time) on the bottom (1st layer) top with 1/3 of the filling and continue for another two layers. Refrigerate for at least 2-3 hours or even better overnight. Just before serving sprinkle with unsweetened cocoa powder or even chocolate shavings. Enjoy!
*If you want to use a bigger pan then you will probably need to double the recipe. Unless of course you only make 2 layers.
Notes
- Use heavy or whipping cream with at least 30% fat to ensure proper thickening in the filling.
- Let ingredients reach room temperature before mixing for best texture; remove from refrigerator 45-60 minutes ahead.
- Optional additions like marsala, brandy, dark rum, coffee liqueur, or vanilla can be folded into the mascarpone.
- Keep tiramisu refrigerated in an airtight container; it lasts 2-3 days chilled or up to two weeks frozen.
- Thaw frozen tiramisu overnight in the refrigerator before serving.
