Description
This tiramisu starts with a custard made by whisking egg yolks, sugar, and whole milk over medium heat until thickened. After cooling, mascarpone and vanilla extract are folded into the custard, then combined with softly whipped heavy cream to lighten the mixture. Ladyfinger cookies are dipped briefly into a coffee and Kahlúa mixture and arranged in layers with the mascarpone custard in a baking dish.
The layering is repeated to create a two-layer dessert that is then refrigerated for at least six hours to allow flavors to meld and the texture to set. Before serving, dusting cocoa powder and chocolate shavings are added as a garnish, providing a delicate bitterness that contrasts with the smooth custard and rich coffee flavors.
Omitting alcohol is possible by substituting extra coffee or water in the soaking mixture. The method balances creamy custard, airy whipped cream, and coffee-soaked ladyfingers to produce the classic, velvety texture tiramisu is known for.
Ingredients
Custard:
- 4 egg yolk
- ½ cup granulated sugar
- ½ cup milk whole
- 8 ounces mascarpone 225 grams
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
Tiramisu:
- ⅔ cup coffee or espresso, room temperature, strong brewed
- 2 tablespoons Kahlúa or brandy, liquor
- 18 to 20 ladyfinger cookies
- cocoa powder chocolate shavings, for garnish, optional, unsweetened
Instructions
- In a medium saucepan, whisk egg yolks, sugar, and milk together until combined. Place over medium heat, and cook, whisking constantly, until thickened (don't rush, this can take 10-15 minutes).
- Remove from the heat and stir in mascarpone and vanilla and let custard cool to room temperature.
- Whip cream with an electric mixer until stiff peaks form. Gently fold into the cooled custard.
- In a small bowl, combine coffee and Kahlua.
- Dip ladyfingers in coffee mixture, turning in the liquid 2 or 3 times. Place a single layer in the bottom of an 8x8" pan.
- Cover with half of the mascarpone custard, then repeat layers one more time.
- Cover and chill for at least 6 hours before serving. Dust with cocoa powder and top with chocolate shavings before serving as desired.
Notes
- Alcohol can be omitted by replacing Kahlúa with additional coffee or water.
