The coffee is prepared by dissolving instant coffee in boiling water and cooling completely to prevent breaking down the cream when dipping ladyfingers.

The ladyfingers are soaked individually for a second to absorb coffee while maintaining shape, creating layers that contrast with the creamy mascarpone mixture. Cocoa powder is sprinkled between layers and on top as a finishing touch. Refrigeration for several hours or overnight allows the dessert to set and meld flavors.

  • 2 ladyfingers 125 g each packet, packets
  • 250 g mascarpone cheese
  • 300 ml whipping cream
  • ½ cup icing sugar
  • 1 teaspoon instant coffee
  • 1 teaspoon vanilla extract
  • 2 tablespoon cocoa powder
  • 1 cup water boiling

Instructions

  1. Pour boiled water into a wide bowl and add 1 teaspoon of instant coffee. Stir and then leave the coffee to cool completely.
  2. Use an electric mixer to beat the whipping cream until it holds stiff peaks.
  3. Add the mascarpone cheese, vanilla extract and icing sugar, and beat again.
  4. Dip each lady/sponge finger one by one into the coffee for 1 second, making sure it's soaked, but not soggy. We want them to hold their shape.
  5. Arrange the sponge fingers on a plate, then have a layer of the cream mixture, sprinkle half of the cocoa powder, another layer of sponge fingers, and repeat until all the ingredients have been used, but make sure the top has the cream on.
  6. Sprinkle cocoa powder on top.
  7. Chill in the fridge for a few good hours, ideally overnight.
