  • 8 egg medium
  • 1/3 cup heavy cream
  • salt to taste
  • black pepper to taste
  • 1/2 cup Parmesan Cheese fresh grated
  • 12 cherry tomato
  • 3/4 cup spinach
  • 8 lices Bacon
  • cooking spray

Instructions

  1. Preheat Preheat the oven to 350F.
  2. Grease the muffin tin with cooking spray or melted butter.
  3. In a large bowl, mix eggs with heavy cream, salt, and pepper. Transfer the mixture to a pouring jug.
  4. To each muffin tin slot, add the grated cheese, chopped tomatoes, and chopped spinach. Give the filling a little press down if needed.
  5. Pour over the egg mixture and tap gently onto the kitchen counter to remove any air bubbles.
  6. Top the egg bites with prepare crispy bacon pieces.
  7. Bake egg bites for 20 minutes.
  8. Serve and enjoy.
