Ingredients
- 4 hard boiled eggs , chopped
- 1 dill pickle , finely chopped
- 3 tablespoons mayonnaise or vegannaise
- 1 teaspoon fresh dill , chopped
- 1/2 teaspoon kosher salt
- 1 stick celery , chopped
- 2 teaspoons lemon juice
- 4 slices sandwich bread of choice

Instructions
- Combine the first 7 ingredients in a bowl.
- Toast bread until golden if desired.
- Place filling on top of 2 pieces of bread and top with second pieces of bread to make sandwiches.
Notes
- Mayonnaise: Opt for a lighter choice by substituting some mayo with Greek yogurt or mashed avocado. You can also use veganaise if you prefer.
- More Add-Ins: Have fun with your ingredients and feel free to add what you love. Dijon mustard, grated carrots and capers would be great additions. People can get quite finicky about what goes in their egg salad, though, so know your audience!
- Spices: My recipe just calls for some salt, lemon juice and dill to brighten it up, but feel free to experiment with other herbs and spices. Curry powder, parsley and chives or even some sriracha are a few ideas to inspire you!
