Eggless Apple Walnut Crumb Cake

This Eggless Apple Walnut Crumb Cake features a moist flour batter mixed with walnuts and topped with a honey-coated apple layer and a crunchy walnut crumb. Baking results in a golden, textured crumb topping and tender cake beneath. The combination offers contrasting textures with sweet fruit, rich walnuts, and a buttery crumb that holds together without eggs, making it a satisfying treat.

Description

The Eggless Apple Walnut Crumb Cake begins with a walnut crumb made by mixing butter, sugar, flour, and ground walnuts into a coarse crumble. The cake batter combines flour, baking powder, baking soda, sugar, oil, butter, and walnuts to create a moist base. Honey-coated thin apple slices are layered atop the batter before the walnut crumb is evenly sprinkled over them and gently pressed down.

Baking at 180°C for about 45 minutes develops a golden-brown crumb crust, while the inside bakes through to a tender crumb. The topping provides a crunchy texture with the walnuts and crumbly bits, contrasting with the soft apple slices and cake. The absence of eggs is compensated by the combination of chemical leaveners and oil for moisture.

Cooling the cake before slicing is important to maintain the crumb topping intact and avoid crumbling. This cake can be enjoyed as a dessert or alongside tea or coffee.
