Eggnog Recipe

This Eggnog Recipe blends milk, egg yolks, and sweet spices to create a creamy, spiced holiday beverage. The mixture is gently heated to infuse flavors from cinnamon, cloves, and nutmeg, then chilled overnight to develop its richness. An optional addition of bourbon adds warmth and depth to the classic creamy drink.

Description

The Eggnog recipe starts by warming whole milk infused with ground cloves, vanilla extract, and cinnamon over low heat, careful not to boil but gently simmer to release aromas. Separately, egg yolks and sugar are whipped until pale and ribbon-like, creating a fluffy base that contributes smoothness and sweetness.

The warm milk mixture is slowly combined with the egg yolks while whisking to temper the eggs and prevent curdling, then strained to ensure a smooth texture. After cooling, the mixture is combined with half and half, additional vanilla, ground nutmeg, and bourbon if desired, for a classic creamy consistency with hints of warm spices.

Chilling overnight allows flavors to meld and thicken for a rich, flavorful eggnog. This drink is traditionally served cold, often during holidays, with optional alcohol for an adult version. The spices and vanilla create a balanced sweetness and warmth to complement the dairy and eggs without overpowering.

Ingredients

Servings
  • 4 cups milk whole
  • 1/4 teaspoon cloves ground
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 12 egg yolk
  • 1 1/2 cups sugar
  • 4 cups half and half
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1 cup bourbon , optional

Instructions

  1. Add the milk, cloves, vanilla and cinnamon into a saucepan over low heat and whisk constantly until it comes to a hint of a simmer (tiny bubbles on the edge start forming).
  2. In a stand mixer (or with a hand mixer) add the eggs and sugar until they lighten in color and get fluffier and like ribbons, about 4-5 minutes.
  3. Slowly add the egg mixture into the milk mixture, whisking while adding it in (careful not to let it boil).
  4. Strain, cool, add bourbon (if using), half and half, vanilla and nutmeg and refrigerate overnight.
