Einspänner is a Viennese coffee made with approximately 2 shots of espresso topped with a layer of whipped cream.

Ingredients
- 2 oz. strong brewed espresso (or coffee, very hot)
- 1 oz. water
- 2 oz. heavy whipping cream , very cold
- sugar , to taste
- Chocolate shavings or cocoa powder , for garnish (optional)
Equipment
- Espresso machine
- Electric whisk
- Piping bag

Instructions
- Pour the coffee into a large cup or serving glass.
- Add the water and, if necessary, a little sugar until completely dissolved.
- Using an electric whisk, whip the thick crème fraîche until stiff peaks form.
- Using a piping bag or a spoon, delicately place the whipped cream just above the coffee to form a layer on top.
- Optionally, sprinkle with chocolate shavings or cocoa powder.
- Serve immediately.
