Everyday Kale and Brussels Sprout Salad

This Everyday Kale and Brussels Sprout Salad is the kind of salad you can throw together with virtually no effort at all, and pairs with EVERYTHING.

Ingredients

Servings
  • 2 tbsp red wine vinegar
  • 2 tbsp lemon juice
  • 1 tbsp mayonnaise light
  • 2 tsp Dijon mustard
  • 1 small garlic clove, grated
  • 1/4 tsp salt plus more for seasoning
  • black pepper for seasoning
  • 4 cups kale roughly chopped, chopped finely
  • 1 cup Brussels sprouts shaved
  • 1/4 cup + 1/8 cup Parmigiano-Reggiano cheese
  • 1/4 cup + 1/8 cup almonds I use Trader Joe's, honey-roasted, slivered
  • 1/4 cup dried cranberries optional
  • croutons See link for recipe below, homemade, optional

Instructions

  1. In the bottom of a medium-sized salad bowl, add red wine vinegar, lemon juice, mayo, mustard, garlic and salt. Whisk to combine. Season to taste with salt and pepper. 
  2. Add kale, Brussels sprouts, cheese, almonds and cranberries to the bowl. Toss to combine. Season to taste with salt and pepper. Top with homemade croutons if using. 

Notes

  • This feeds two people as a side salad, one for an entree. Can also easily be double to feed 4-6!
  • To make it even easier, you can definitely use your favorite store-bought vinaigrette.
