Fiesta Lime Chicken Recipe

Fiesta Lime Chicken features marinated grilled chicken cutlets topped with melted cheddar cheese and fresh pico de gallo. The marinade blends lime juice, soy sauce, sweet chili sauce, and spices for a flavorful, tangy, and lightly spicy profile. The finished dish combines juicy grilled chicken with cheesy richness and fresh salsa toppings.

Description

This recipe starts by marinating chicken cutlets in a mixture including fresh lime juice, soy sauce, sweet chili sauce, Worcestershire sauce, garlic, cumin, and black pepper. The marination allows the flavors to penetrate the chicken, enhancing its moisture and taste.

Grilling the chicken over medium heat cooks it quickly while adding a slight char. Adding shredded cheddar cheese on the chicken just after flipping lets the cheese melt as the chicken finishes cooking. Serving with pico de gallo made from diced Roma tomatoes, onions, cilantro, lime juice, and seasoning adds brightness and freshness to the finished plate. Tortilla strips add a crunchy texture contrast.

This dish is suitable for a casual dinner with Mexican-inspired flavors and can be paired with rice, beans, or a side salad.
