Fig Salad

This super simple Fig Salad is vegan, and such a creative and delicious spin on a traditional salad.

Ingredients

Servings
  • 10 large figs halved
  • 2 tbsp. olive oil
  • Juice of half a lemon
  • 1 large handful fresh parsley very finely chopped
  • 1/4 cup vegan or regular feta
  • 1/4 cup chopped walnuts
  • 1/2 tsp sea salt
  • 1/4 tsp Fresh cracked pepper
  • handful of edible chamomile flowers optional

Instructions

  1. To assemble the salad, simply add the halved figs to a large plate as begin adding the toppings to the salad.
  2. Drizzle on the oil and lemon.  Dust on the walnuts, feta, parsley and seasoning.
  3. Enjoy!

Notes

  • If you don't like walnuts, use pecans or pine nuts!
  • If you don't have feta, use another favorite vegan or regular cheese.
