Five Ingredient Blender Muffins are a quick, healthy and gluten-free treat your family can grab and take on the run. They are easy to throw in the blender and way healthier than packaged muffins.

Ingredients

  • ½ cup cashew butter
  • 1 ripe banana
  • 1 egg
  • ½ teaspoon baking powder
  • 1 tablespoon pure maple syrup
  • Toppings: Chocolate Chips fruit, chia seeds, coconut, cocoa nibs, bacon)

Instructions

  1. Preheat oven to 375º.
  2. Put all ingredients into a blender and mix.
  3. Spray muffin pan with cooking spray.
  4. Spoon batter into muffin pans halfway full.
  5. Bake for 6-9 minutes.
  6. I doubled this to make 24 mini muffins.
