  • 1 ¾ cups milk 400ml
  • cup water 75ml, cold
  • 2 teaspoons fast action dry yeast
  • 3 ¾ cups all-purpose flour 600g, aka plain flour
  • ¼ cup butter melted
  • 2 tablespoons caster sugar
  • 2 teaspoons salt

Instructions

  1. Scald the milk by bringing it just to the boil in a saucepan and then removing it from the heat. Pour the hot milk into a large bowl and add the cold water. Leave it to cool to warm, then stir in the yeast and leave for 5 minutes.
  2. Add the flour, melted butter, sugar and salt to the bowl. Stir to bring it together, then knead it in the bowl for two minutes.
  3. Cover the bowl with a tea towel and leave to rise for 1 hour, kneading for 1 minute twice during the rising time.
  4. Line a baking tray with baking paper.
  5. Shape the dough into small equal-sized balls and place slightly apart on the prepared tray. Leave to rise for 40 minutes.
  6. Preheat oven to 200°C/400°F
  7. Dust the tops of the dough lightly with flour, then bake for 20 minutes or until risen and golden.
