French Carrot Salad
Description
The salad starts by julienning peeled carrots using a vegetable peeler or grater, producing thin, tender strips. The dressing is quickly whisked from extra virgin olive oil, lemon juice, honey, Dijon mustard, kosher salt, ground cumin, and freshly ground black pepper. This blend offers a tangy and slightly sweet flavor profile with a hint of warmth from the cumin.
Green onions sliced diagonally and chopped fresh parsley add crisp onion notes and herbaceous brightness. Tossing the carrots with dressing and herbs creates a vibrant, lightly dressed salad that retains the carrot's natural crunch and sweetness while introducing complex seasoning elements.
The salad should be served fresh but will keep for 3 to 4 days refrigerated, though the carrots soften over time. It pairs well as a refreshing side dish alongside a variety of meals. It also works as a light starter or a salad component in a composed plate.
Techniques for julienning carrots include using a vegetable peeler with a julienne side, a box grater, or a food processor attachment. Storing the salad covered helps maintain freshness and texture.
Ingredients
- 1 pound carrot peeled
- ¼ cup parsley roughly chopped or cilantro
- 2 green onions thinly sliced on a diagonal
Carrot salad Dressing
- 3 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- 2 teaspoons honey
- 1 teaspoon Dijon mustard
- ½ teaspoon kosher salt
- ¼ teaspoon cumin ground
- ¼ teaspoon black pepper freshly ground
Instructions
- Julienne the carrots. Use a vegetable peeler to julienne the carrots and place in a large mixing bowl.
- Make the dressing. In a small bowl, whisk together the oil, lemon juice, mustard, honey, salt, and pepper.
- Add everything to a mixing bowl. Add the green onions and parsley to the mixing bowl, then pour the dressing on top. Toss it together until it's well combined.
- Serve. If you'd like, you can garnish with additional freshly chopped parsley before serving.
Notes
- If you lack a julienne vegetable peeler, use a box grater or grater attachment on a food processor to shred carrots.
- Store this salad in the refrigerator for 3 to 4 days; carrots will soften but salad remains tasty.
