  • 8 tablespoons butter unsalted
  • 4 onion sliced, yellow
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup dry sherry optional
  • 1 thyme sprig, fresh
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper coarse ground
  • 4 lices French bread
  • 1 cup gruyere cheese grated

Instructions

  1. Add the butter to a large stock pot on medium heat with the onions and stir and cook until the onions are see through but not at all browned, about 30-35 minutes.
  2. Add the broth, Worcestershire sauce, sherry, thyme, salt and pepper and bring to a boil, then reduce to a simmer for 30 minutes.
  3. While the soup is simmering toast the French bread slices, and when ready ladle the soup into a soup bowl, top with french bread, then Gruyere cheese and place into a toaster oven or 375 degree oven for 10-12 minutes or until the cheese is melted and browned.
