French Vinaigrette

French Vinaigrette combines minced shallots and champagne vinegar with Dijon mustard and honey to balance acidity and sweetness. The addition of olive and sunflower oils creates a smooth, lightly textured dressing. Fresh herbs like chives, tarragon, and parsley bring herbal notes. This vinaigrette provides a bright, balanced salad dressing with a hint of complexity from the piment d'espelette spice when included.

Description

The French Vinaigrette starts with minced shallots steeped briefly in champagne vinegar, lending a mild pungency that softens the vinegar's acidity. Dijon mustard and honey are then whisked in to provide emulsification and a subtle sweet counterpoint. The blend of extra virgin olive oil and a neutral oil like sunflower or avocado oil yields a balanced, smooth base with a light mouthfeel. The optional piment d'espelette adds subtle heat and a distinctive flavor note that complements the mustard and vinegar.

Fresh minced chives, tarragon, and flat-leaf parsley are stirred in last, introducing fresh herbal brightness and complexity. Salt and black pepper adjust the seasoning precisely. This vinaigrette is ideal for drizzling over mixed greens or hearty salad greens, offering a nuanced dressing with layers of flavor and a smooth texture.

Variations in vinegar type, such as substituting with apple cider or sherry vinegar, can tailor acidity levels. The vinaigrette can be stored refrigerated for up to five days maintaining freshness.
