Fresas Con Crema (Mexican Strawberries & Cream)
Description
Fresas Con Crema blends fresh, perfectly ripe strawberries with a sweet and creamy sauce made by pureeing sweetened condensed milk, media crema (a rich Mexican cream), plain yogurt (such as nonfat Greek yogurt or crème fraîche), and vanilla extract. The cream mixture has a milkshake-like smoothness and adds sweetness and mild tanginess to the dessert. The fresh strawberries are sliced and gently folded into the chilled crema, then refrigerated for several hours to allow the flavors to marry and the cream to soak into the berries, softening them slightly.
This dessert is served cold, making it a light and cool option after meals. The strawberry slices add bright, juicy texture contrasted by the luscious cream coating. It pairs naturally with simple Mexican meals or enjoyed solo as a sweet treat.
To maintain freshness and texture, keep the cream and strawberries cold until assembly. The cream can be prepared ahead and stored, and once combined, consume within 24 hours to prevent the cream from thinning due to strawberry juices. The recipe suggests variations like using cream cheese instead of yogurt or adding pink food coloring for an attractive presentation.
Ingredients
- 1 ½ Lb strawberries fresh, ripe
- 1 oz sweetened condensed milk can
- 1 .6 oz media crema canned
- 1 cup PLAIN yogurt nonfat Greek yogurt, regular plain yogurt, or Crème fraîche
- 1 teaspoon vanilla extract
Instructions
- To a blender, add sweetened condensed milk, media crema, Greek yogurt, and vanilla extract.
- Puree everything well. Make sure to scrape the sides with a spatula to make sure all ingredients are incorporated well. Note: The cream mixture is like a milkshake.
- Pour into a mixing bowl and set aside in the fridge.
- Slice the berries in whatever shape you like: halves, fourths, circles, cubes, etc.
- dd the sliced strawberries into the reserved crema mixture and mix gently.
- Let it sit in the fridge for a few hours for the strawberries to infuse the cream. Besides, this dessert tastes better when cold.
- Divide into bowls or glasses and enjoy!
Notes
- Keep all dairy and strawberries cold before preparation to maintain freshness.
- Select bright red strawberries with fresh green caps and wash just before serving.
- Add pink food coloring or extra strawberries before blending for a pink-hued cream if desired.
- Yogurt can be substituted with cream cheese for a denser, richer texture.
- Store sliced strawberries in an airtight container in the fridge for up to 2 days; drain excess juice before serving.
- Keep the cream mixture refrigerated separately up to 3 days and stir before use.
- Once strawberries are mixed with cream, consume within 24 hours as the cream will thin over time from berry juices.
