Fresas con Crema (Strawberries and Cream)
Description
This Fresas con Crema recipe begins by whisking sour cream, sweetened condensed milk, evaporated milk, and vanilla extract into a smooth cream mixture. Strawberries are hulled and sliced or cut into bite-sized pieces, then layered alternately with the cream in serving glasses or bowls. The layering continues until the container is filled, ending with a top layer of cream and optionally garnished with whole strawberries and whipped cream.
The dessert has a harmonious balance of creamy sweetness and fresh fruit tartness. The use of sour cream or Mexican crema provides a mild tang that offsets the sugary condensed milk. The evaporated milk adds smoothness without extra sweetness. The cold, creamy layers make it refreshing as a light dessert or snack.
Substitutions for dairy ingredients are possible, including using light sour cream, crème fraîche, or Greek yogurt, and alternatives for evaporated milk such as heavy cream or half and half. Adjustments such as adding sugar to tart berries help balance flavor. This versatile recipe suits varying preferences and dietary needs.

- 1 pound strawberry fresh
- 2 cups sour cream or Mexican crema

Layering Strawberries and Cream
- Hull the strawberries and discard the stems. Cut the strawberries into bite size pieces or into thin slices.
- Start layering the berries and cream. Add a couple of spoonfuls of strawberries into a glass or cup (about 1/4 cup), Pour some of the cream mixture over the berries. Add more fruit and top with the cream. Layer fruit and cream until the cups are full.
Notes
- You can use light sour cream, crème fraîche, or plain Greek yogurt instead of full-fat sour cream.
- Evaporated milk may be substituted with heavy cream, half and half, or whole milk depending on preference.
- If strawberries are too tart, sprinkle about a tablespoon of sugar over them and let sit for 5 to 10 minutes before layering.
- To make a dairy-free version, use dairy-free sour cream, coconut milk, and condensed coconut milk.
