Description
The salad starts by slicing fresh sweet corn kernels off the cob, which provides a juicy, sweet base. Adding diced mango adds tropical sweetness, while the diced yellow and orange bell peppers contribute crunch and bright color. Halved cherry tomatoes and minced red chili pepper bring mild acidity and heat, balanced by the sharpness of red onion and freshness of cilantro.
The dressing is a simple combination of rice vinegar, lime zest, lime juice, and avocado oil, lightly seasoned with kosher salt. Tossing everything together produces a lively salad with a balance of sweet, tangy, and mildly spicy notes. It can be served immediately or chilled for up to two days.

Ingredients
- 2 sweet corn ears, fresh, husked
- 1 Mango pitted and diced, fresh, peeled
- 1/2 yellow bell pepper cut into small dice
- 1/2 orange bell pepper cut into small dice
- 1 cup cherry tomato halved
- 1 red chili pepper minced
- 1/2 red onion cut into small dice
- 1/2 cup cilantro fresh, minced
- 2 tablespoons rice vinegar
- lime zest, grated, quantity: 2 limes
- 2 tablespoons lime juice fresh
- 1 tablespoon avocado oil or olive oil
- kosher salt
Instructions
- Use a sharp knife to cut the corn kernels from the cobs. Place into a large bowl
- Add the remaining ingredients to the bowl and mix well. Serve immediately or cover and refrigerate until ready to serve, up to 2 days.
