Instructions

  1. Cook the bacon in a large skillet over medium heat until crispy.  Remove the bacon from the skillet to a plate lined with a paper towel to soak up the excess grease.
  2. Spread the butter (do not use all the butter) on the outside of each slice of bread. Set aside.
  3. Melt the remaining butter in a different clean skillet (different from the one you cooked the bacon in) over medium high heat.
  4. Crack the eggs into the skillet and season them with salt and pepper.  Cook for 2-3 minutes until the bottom of the eggs are set. Then flip and cook for 1 more minute.  Place the cheddar cheese on top of the eggs and allow it to melt. Move the eggs from the skillet to a separate plate and set aside.
  5. Then place 2 slices of the bread butter side down into the skillet.  Top each piece of bread with an American cheese slice.
  6. Layer the eggs on top of the bread (2 eggs per bread) and top with the cooked bacon (2 slices per bread) and the remaining slices of bread (butter side out).
  7. Cook the sandwiches in the skillet over medium high heat until golden brown (3-4 minutes).  Flip and brown the other side of the sandwich for 3-4 minutes.
  8. Remove the skillet, cut in half and enjoy!

Notes

  • These are best served fresh.  You can use mayonnaise instead of butter in this recipe if you prefer.  Also, these sandwiches are great with any of your favorite types of cheese.
