  • 2 large tomato green
  • 2 egg
  • 1/2 cup milk whole
  • 1/2 cup flour
  • 1/2 cup cornmeal
  • 1/2 cup bread crumbs plain
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper coarse ground
  • canola oil for frying

Instructions

  1. Cut out the core of the tomato.
  2. Slice the tomatoes into 1/4 inch slices.
  3. Make a dredging station, in one bowl eggs and milk are whisked together, in a second bowl the flour and in the third bowl the cornmeal, breadcrumbs, salt and pepper mixed together.
  4. Dip the tomato slices in the flour, then the milk/egg bowl then the breadcrumbs bowl.
  5. Place onto a cookie sheet while you coat the remaining slices.
  6. To a deep skillet add the canola oil, 1 inch deep on medium high heat.
  7. Using a spatula slide the tomato slices into the hot oil and cook for 3-4 minutes or until browned on each side.
  8. Remove the cooked tomato slices to a cooling rack.
