  • 1 cup all-purpose flour
  • 2 egg beaten, large
  • 2 cups breadcrumbs
  • salt to taste
  • black pepper to taste
  • 2 zucchini sliced into 1/4-inch rounds, medium

Instructions

  1. Heat oil in a large skillet over medium heat until it reaches 350°F.
  2. Prepare the dredging stations: Place flour in one bowl, beaten eggs in another, and breadcrumbs mixed with salt and pepper in a third bowl.
  3. Dredge zucchini rounds first in flour, then dip in eggs, and finally coat with breadcrumb mixture.
  4. Fry the breaded zucchini in batches until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.
