Description

This recipe begins by rendering vegetable shortening and cooking beef chorizo until nearly crispy. Cooked beans are blended with chipotle chiles in adobo sauce, creating a smoky puree. The chorizo is then combined with the bean mixture, incorporating its rendered fat and spice.

Shredded queso Oaxaca is stirred in until melted, introducing creamy, stringy texture. Pickled jalapeños, along with their juice, add a vinegary heat. The mixture simmers briefly to integrate flavors before serving.

Frijoles Puercos can be served hot as a bean dip for tortilla chips or as a flavorful side dish. The cheese and chorizo add richness and depth to the smooth, smoky beans.

Ingredients

  • 8 cups beans cooked, with liquid
  • 3 chipotle chiles in adobo sauce they come in a can
  • 3 Tbsp vegetable shortening or lard
  • 1 pound beef chorizo or pork chorizo
  • 10 oz queso Oaxaca or mozzarella, or Chihuahua
  • ¼ cup pickled jalapeños with 2 tablespoons of the juice chopped
  • 4 to 6 lices Bacon optional

Instructions

  1. In a medium pot or large skillet, add the vegetable shortening (or lard) and heat over medium heat. Cook the chorizo until almost crispy.
  2. In a blender, puree the cooked beans with the chipotle pepper in two different batches.
  3. Add bean mixture to the cooked chorizo.
  4. Mix the beans and chorizo well to incorporate then add the shredded cheese.
  5. Mix the cheese into the beans really well then add the jalapeños and jalapeño juice. Cook for another five minutes or so in low heat to incorporate all of the flavors.
  6. Serve hot with tortilla chips like a bean dip or as side dish. 

Notes

  • Refrigerate leftovers for up to 1 week or freeze in small containers or bags for up to 3 months.
