  • 1 ounce Parmesan Cheese grated
  • 1 tablespoon butter
  • 3/4 cup asparagus chopped, fresh
  • 3/4 cup ham chopped
  • 1 tablespoon parsley chopped, fresh

Instructions

  1. Preheat the broiler on high.
  2. In a medium bowl, whisk together the eggs, black pepper, and salt until well blended. Add the parmesan cheese and stir to combine.
  3. Melt the butter in a 12 inch non-stick skillet over medium heat. Add the asparagus and cook, stirring frequently, until tender. Add the ham to the skillet and cook 2-3 minutes, until warmed through.
  4. Pour the eggs into the skillet and stir gently with a rubber spatula. Cook 4-5 minutes, until the eggs have set on the bottom and are starting to set on the top. Sprinkle the parsley over the top of the eggs.
  5. Move the skillet to the oven and broil 3-4 minutes, until the top is lightly browned and fluffy, and the eggs are cooked through. Cut the frittata into 6 wedges and serve immediately.
