Ingredients
- ½ cup unsalted butter softened
- ¾ cup brown sugar
- ¼ cup white sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ¼ cup unsweetened cocoa powder
- 2 cups flour
- ½ teaspoon salt
- ½ teaspoon baking powder
Frosting
- 4 ounces unsweetened baking chocolate
- ½ cup butter softened
- 2 teaspoons vanilla extract
- 6 cups powdered sugar
- ⅓ cup milk
- ½ cup Rainbow Candy Chips
Instructions
- In a large bowl, cream the butter and both sugars until fluffy. Then, beat in the egg, vanilla, and cocoa powder.
- Add the flour, baking powder, and salt and mix until combined. The dough will be very crumbly.
- Divide the dough into six equal portions and form each portion into a ball. The dough will be very crumbly. Mix until it comes together.
- Refrigerate the cookie dough balls for at least 30 minutes.
- Meanwhile, preheat the oven to 350 degrees F.
- Bake the cookies for 15-18 minutes. You want the edges to be golden brown but the middle is still chewy.
- Cool for 5 minutes and then transfer to a rack to cool completely.
- To make the frosting, microwave the baking chocolate in a large microwaveable bowl in 30-second increments until melted. Cool for 5 minutes.
- Add the sugar, butter, and vanilla to an electric mixer. Gradually add the milk while beating with the mixer.
- Pipe the buttercream frosting around the top of the cookies using a piping bag with a round tip.
- Sprinkle the rainbow candy chips on top.
Notes
- These cookies are best enjoyed fresh, so I don't recommend making them too far in advance. After a few days, the frosting and candy chips can lose their luster, and the cookies may dry out.
- Chilling the dough helps prevent the cookies from spreading too much in the oven and keeps them nice and thick.
- While rainbow candy chips are the classic choice for Galaxy Cookies, you can mix things up! Use different chocolate chips, sprinkles, or edible glitter colors to create your unique galaxy.
