Ingredients

Servings
  • ½ cup unsalted butter softened
  • ¾ cup brown sugar
  • ¼ cup white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ cup unsweetened cocoa powder
  • 2 cups flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder

Frosting

  • 4 ounces unsweetened baking chocolate
  • ½ cup butter softened
  • 2 teaspoons vanilla extract
  • 6 cups powdered sugar
  • cup milk
  • ½ cup Rainbow Candy Chips

Instructions

  1. In a large bowl, cream the butter and both sugars until fluffy. Then, beat in the egg, vanilla, and cocoa powder.
  2. Add the flour, baking powder, and salt and mix until combined. The dough will be very crumbly.
  3. Divide the dough into six equal portions and form each portion into a ball. The dough will be very crumbly. Mix until it comes together.
  4. Refrigerate the cookie dough balls for at least 30 minutes.
  5. Meanwhile, preheat the oven to 350 degrees F.
  6. Bake the cookies for 15-18 minutes. You want the edges to be golden brown but the middle is still chewy.
  7. Cool for 5 minutes and then transfer to a rack to cool completely.
  8. To make the frosting, microwave the baking chocolate in a large microwaveable bowl in 30-second increments until melted. Cool for 5 minutes.
  9. Add the sugar, butter, and vanilla to an electric mixer. Gradually add the milk while beating with the mixer.
  10. Pipe the buttercream frosting around the top of the cookies using a piping bag with a round tip.
  11. Sprinkle the rainbow candy chips on top.

Notes

  • These cookies are best enjoyed fresh, so I don't recommend making them too far in advance. After a few days, the frosting and candy chips can lose their luster, and the cookies may dry out.
  • Chilling the dough helps prevent the cookies from spreading too much in the oven and keeps them nice and thick.
  • While rainbow candy chips are the classic choice for Galaxy Cookies, you can mix things up! Use different chocolate chips, sprinkles, or edible glitter colors to create your unique galaxy.
  • Pipe the frosting with a ziploc bag with the tip cut off if you don't have a piping bag.
  • Add some rainbow chips or regular chocolate chips to the dough to make the cookies even more chocolatey.
  • If you want to make smaller cookies, portion the dough out into 10 or 12 balls. Smaller cookies will bake faster, so start checking them around the 10-minute mark to avoid overbaking.
  • You can find the rainbow chips on Amazon or in the baking section of craft stores.
