Gavurdagi Salad

Gavurdagi Salad is a fresh vegetable and walnut salad featuring finely diced tomatoes, cucumber, green pepper, and red onion combined with coarsely chopped walnuts and parsley. Tossed in a dressing of olive oil, pomegranate molasses, sumac, dried mint, and salt, it offers a balance of bright acidity, mild sweetness, and herbaceous notes. The walnuts contribute crunchy texture and rich nuttiness, creating a flavorful and refreshing side dish or light meal component.

Description

In Gavurdagi Salad, the main vegetables—large tomatoes, medium cucumber, green pepper, and red onion—are finely diced to create a crisp, bite-sized mix. Fresh parsley adds a herbaceous freshness, while walnuts bring a crunchy, earthy dimension. The combination of vegetables and nuts provides a mix of textures from juicy, tender pieces to the firm crunch of walnuts.

The dressing blends olive oil with pomegranate molasses, sumac, and dried mint, creating a sweet-tart and slightly tangy flavor profile balanced by the mellow oil and herbs. Sumac adds a subtle lemony note, complementing the vegetables and adding depth. The salad is seasoned lightly with salt to enhance all flavors.

This salad makes an excellent accompaniment to grilled meats or as part of a mezze spread. Its fresh, bright flavors and varied textures make it suitable as a light starter or side dish to balance richer foods.
