This Paleo Strawberry Banana Bread recipe is fresh, easy, light and delicious! This gluten free bread is made with good for you ingredients. It's great for a healthy breakfast, afternoon pick me up, or dessert.

Ingredients
- 1 cup mashed ripe bananas about 2 to 3 bananas
- 3 eggs
- 1/4 cup coconut sugar
- 2 tsp vanilla extract
- 2 cups almond flour
- 1/2 cup tapioca flour or arrowroot starch
- 1 tsp baking soda
- 1/4 cup coconut oil melted
- 1 tsp lemon juice
- 1 cup diced strawberries
Instructions
- First, preheat oven to 350 degrees Fahrenheit and line a bread pan with parchment paper.
- In a large mixing bowl, add mashed bananas, eggs and vanilla extract. Stir until combined.
- Next, sift in almond flour and tapioca flour. Then add remaining ingredients (except strawberries).
- Once mixed, toss 3/4 cups of the strawberries with a tablespoon of tapioca flour. Then, fold in coated strawberries to the batter.
- Pour batter into the lined bread pan. Sprinkle remaining strawberries on top.
- Bake for 55 to 65 minutes, or until a toothpick inserted comes out clean. If bread is browning on top but isn't done baking, add aluminum foil on top and continue baking.
- Finally, remove from oven and cool completely before slicing.
