This Whole30 Gravy is incredibly hearty, savory and flavorful! It is made with only 3 main ingredients but packs a huge flavor punch. This quick and easy gravy is perfect for chicken, turkey, sausage or roasted vegetables! It's just as delicious for Thanksgiving or Easter as it is for weeknight dinners.

Ingredients
- 3 tbsp grass fed butter or ghee
- 1/4 cup tapioca flour or arrowroot starch
- 16 ounces chicken broth
- pinch sea salt
- pinch ground pepper
- pan drippings optional, see note

Instructions
- First, add butter to a large skillet over medium heat.
- Once melted (do not let it burn or brown), whisk in 2 tablespoons of tapioca flour.
- Once flour is whisked in, add in chicken broth.
- Whisk continuously to prevent burning. If using pan drippings, add to skillet.
- Continue whisking over medium heat. Add tapioca flour one tablespoon at a time until gravy reaches desired thickness.
- Then, add a pinch of sea salt and pepper. Whisk to combine.
- Finally, remove from heat and serve immediately.
Notes
- If using pan drippings, add up to 3 tablespoons into the gravy. Continue whisking until thick.
- Grass fed butter or ghee can be used.
- More tapioca flour will yield a thicker gravy.
- This recipe makes about 1.5 to 2 cups of gravy.
- Store leftover gravy in an airtight container in the fridge for up to 3 days.
- To reheat, microwave or add to a skillet over low heat and continuously whisk until warmed.
