This Whole30 Grilled Chicken Strawberry Salad is light, refreshing and flavorful! It has the perfect balance between sweet and savory. This Whole30 salad is great for a quick and easy lunch, dinner, or meal prep.

Ingredients
- 1 package spinach or mixed greens about 6 to 8 cups
- 2 chicken breasts
- ¼ tsp ground pepper
- ¼ tsp sea salt
- 1 cup strawberries quartered
- ½ red onion chopped
- ½ cup pecans
- Whole30 balsamic vinaigrette
Instructions
- First, pat chicken dry on both sides with paper towels. Season with pepper and sea salt.
- Then, grill chicken for 4 to 5 minutes on each side or until cooked through. Chicken is done when its internal temperature reaches 165 degrees Fahrenheit.
- Meanwhile, in a large salad bowl, add mixed greens, strawberries, red onion and pecans.
- Once chicken is done, slice into strips. Add chicken to the salad bowl.
- Finally, toss salad with balsamic vinaigrette and serve!
Notes
- Chicken can be cooked on a stovetop. Simply add 1 tablespoon olive oil to a skillet and cook on low medium for 4 to 5 minutes on each side or until done.
- Chicken is done when its internal temperature reaches 165 degrees Fahrenheit. Use a meat thermometer to check doneness.
- I highly suggest Primal Kitchen Foods Balsamic Vinaigrette.
- Store leftovers in an airtight container for up to 3 days.
- If making ahead of time, store salad with chicken separately from dressing. This helps prevent sogginess.
