Ingredients

  • 1 package spinach or mixed greens about 6 to 8 cups
  • 2 chicken breasts
  • ¼ tsp ground pepper
  • ¼ tsp sea salt
  • 1 cup strawberries quartered
  • ½ red onion chopped
  • ½ cup pecans
  • Whole30 balsamic vinaigrette

Instructions

  1. First, pat chicken dry on both sides with paper towels. Season with pepper and sea salt.
  2. Then, grill chicken for 4 to 5 minutes on each side or until cooked through. Chicken is done when its internal temperature reaches 165 degrees Fahrenheit.
  3. Meanwhile, in a large salad bowl, add mixed greens, strawberries, red onion and pecans.
  4. Once chicken is done, slice into strips. Add chicken to the salad bowl.
  5. Finally, toss salad with balsamic vinaigrette and serve!

Notes

  • Chicken can be cooked on a stovetop.  Simply add 1 tablespoon olive oil to a skillet and cook on low medium for 4 to 5 minutes on each side or until done.
  • Chicken is done when its internal temperature reaches 165 degrees Fahrenheit.  Use a meat thermometer to check doneness.
  • I highly suggest Primal Kitchen Foods Balsamic Vinaigrette.
  • Store leftovers in an airtight container for up to 3 days.
  • If making ahead of time, store salad with chicken separately from dressing.  This helps prevent sogginess.
  • Nutrition facts do not include dressing.
