This Whole30 Brussels Sprouts Salad is easy, light and fresh. It's easy to make and perfect for a quick and easy meal. Top with protein for a hearty lunch or dinner!

Ingredients
- 6 cups Brussels sprouts chopped
- 6 pieces Bacon chopped
- 1 apple sliced
- 1/4 tbsp pecans
- 2 tbsp slivered almonds
- 1/4 cup dried cranberries
Apple Cider Vinaigrette
- 2 tbsp apple cider
- 2 tbsp olive oil
- 1 tsp mustard
- 1/2 tsp cinnamon
- Pinch nutmeg

Instructions
- First, in a large skillet cook bacon until crispy. Cut bacon into small pieces.
- Next, wash and dry Brussles spouts. Then, remove stems and chop Brussels sprouts until finely chopped.
- Slice apple into pieces.
- To make the dressing, add all ingredients to a small bowl and stir to combine.
- Arrange salad: add Brussels, apple, bacon, pecans, almonds and dried cranberries in a large bowl. Toss salad with dressing.
Notes
- Serve fresh for best results.
- Store leftovers in the fridge for up to 3 days.
