  • ¼ cup almond butter raw, unsalted
  • ½ cup water
  • lemon zest from half a lemon
  • 3 tablespoons lemon juice fresh
  • 1 tablespoon ginger See Notes for tips on peeling and zesting, fresh, puree
  • 1 clove garlic for milder flavor, sub ⅛ teaspoon garlic powder
  • 2 teaspoons maple syrup
  • 1 teaspoon Turmeric ground
  • ½ teaspoon salt fine sea salt
  • black pepper about 8 to 10 turns of a pepper grinder

Instructions

Instructions if using a blender (recommended):

  1. Combine all ingredients in a blender, and blend until smooth. Taste and adjust salt and lemon as desired. Can be used immediately or refrigerated for later use.

To mix the dressing by hand:

  1. Use a microplane to zest the lemon, ginger and garlic. Whisk all ingredients together in a bowl.

Notes

  • Peel ginger easily with a spoon by scraping off the skin before zesting or grating.
  • If not using a blender, use a microplane to zest lemon and ginger and to puree garlic for best texture.
  • Store dressing in an airtight container in the refrigerator for up to 4 days.
