Ginger-Turmeric Dressing (Trader Joe's Copycat)
Description
The Ginger-Turmeric Dressing imitates a Trader Joe's favorite, combining almond butter with fresh lemon zest and juice, minced ginger and garlic (or garlic powder for milder taste), ground turmeric, maple syrup, salt, and freshly ground black pepper. When blended until smooth, it creates a creamy dressing with a pronounced citrus aroma and warming spices. Its flavor profile is both zesty and earthy, with the nut butter bringing body and richness to the dressing.
This dressing can be used immediately or chilled for later, and it pairs well with salads, steamed vegetables, or as a sauce over grains. The fresh ginger and lemon zest provide brightness while turmeric adds depth and color.
For preparation, a blender achieves the smoothest consistency, but using a microplane to zest and puree ingredients followed by whisking can work as well. Leftovers should be stored in an airtight container in the refrigerator and used within four days to maintain freshness and flavor.
Ingredients
- ¼ cup almond butter raw, unsalted
- ½ cup water
- lemon zest from half a lemon
- 3 tablespoons lemon juice fresh
- 1 tablespoon ginger See Notes for tips on peeling and zesting, fresh, puree
- 1 clove garlic for milder flavor, sub ⅛ teaspoon garlic powder
- 2 teaspoons maple syrup
- 1 teaspoon Turmeric ground
- ½ teaspoon salt fine sea salt
- black pepper about 8 to 10 turns of a pepper grinder
Instructions
Instructions if using a blender (recommended):
- Combine all ingredients in a blender, and blend until smooth. Taste and adjust salt and lemon as desired. Can be used immediately or refrigerated for later use.
To mix the dressing by hand:
- Use a microplane to zest the lemon, ginger and garlic. Whisk all ingredients together in a bowl.
Notes
- Peel ginger easily with a spoon by scraping off the skin before zesting or grating.
- If not using a blender, use a microplane to zest lemon and ginger and to puree garlic for best texture.
- Store dressing in an airtight container in the refrigerator for up to 4 days.
