Description

Glazed Carrots start with medium scrubbing and coating in olive oil, kosher salt and pepper, then roasting at a high temperature to develop caramelization and tender texture. After initial cooking, honey and chopped fresh thyme are stirred in and the carrots return to the oven to finish cooking and absorb the glaze. Once browned and tender, fresh parsley and cubed unsalted butter are mixed in off the heat to add freshness and richness.

The resulting dish has a warm, sweet character from the honey balanced by the earthy, green notes of thyme and parsley. The butter melt adds a silky mouthfeel.   • 2 pounds carrot scrubbed, medium
  • 1 ½ tablespoons olive oil
  • salt to taste, Kosher salt and freshly ground
  • black pepper to taste, Kosher salt and freshly ground
  • 2 tablespoons honey
  • 2 teaspoons thyme chopped fresh leaves
  • 2 tablespoons parsley chopped fresh leaves
  • 1 ½ tablespoons butter cubed, unsalted

Instructions

  1. Preheat oven to 425 degrees F. Line a baking sheet with parchment paper.
  2. Place carrots in a single layer onto the prepared baking sheet. Add olive oil; season with salt and pepper, to taste. Gently toss to combine.
  3. Place into oven and bake for 20-25 minutes, or until almost fork tender.
  4. Stir in honey and thyme. Place into oven and bake until tender, an additional 5 minutes.
  5. Remove from oven. Stir in parsley and butter until melted, about 1-2 minutes; season with salt and pepper, to taste.
  6. Serve warm.
