Grandma's Surprise Onion Soup Bread (1968)

Grandma's Surprise Onion Soup Bread is a yeast-free quick bread made with onion soup mix, buttermilk, and cheddar cheese. The loaf features a tender crumb with a savory onion and cheddar flavor, topped with melted cheese that adds a golden crust. The recipe requires no rising time and bakes in under an hour.

Description

This bread blends all-purpose flour with dry onion soup mix and baking soda for leavening, creating a flavorful batter enriched with buttermilk and cheddar cheese. The mixture is poured into a loaf pan, topped with additional shredded cheddar to form a cheesy crust upon baking.

Baked at 350°F for 50 to 60 minutes, the loaf yields a moist bread with savory onion notes and sharp cheese flavor throughout. Cooling the bread properly prevents it from becoming soggy and helps maintain structure, making slicing easier.

This quick bread is convenient for pairing with soups and salads or serving as a warm snack. It can be sliced fresh or toasted. The onion soup mix simplifies seasoning, offering a nostalgic, no-fuss preparation.

Grating your own cheddar cheese instead of pre-shredded can improve melting and freshness.

Ingredients

Servings
  • 3 ⅓ cups all-purpose flour
  • ½ teaspoon baking soda
  • 2 pkg (2 oz) onion soup mix dry
  • 2 cups buttermilk
  • 1 ½ cups cheddar cheese grated or shredded, divided

Instructions

  1. Preheat your oven to 350°.
  2. Mix together all-purpose flour, baking soda and soup mix. Stir in buttermilk. Add 1 cup of cheddar cheese.
  3. Place into a greased 9x5 loaf pan. Sprinkle remaining cheddar cheese on top. Bake.
  4. Oven for 50 to 60 minutes. Allow to cool in pan for 10 minutes, then place on a wire rack until cool. Do not slice while the bread is hot, it will dry it out.

Notes

  • Allow bread to cool in the pan for 10 minutes, then transfer to a wire rack to finish cooling to avoid sogginess.
  • For best melting and flavor, grate or shred your own cheddar cheese rather than using pre-shredded.
