Greek Cheese Triangles - Tiropitakia

Greek Cheese Triangles (Tiropitakia) are crisp phyllo pastry turnovers filled with a blend of feta, Gruyere, and cream cheese mixed with small bacon pieces and eggs. The pastry is brushed with butter and oil then folded into triangular shapes, topped with an egg wash and sesame seeds before baking to golden crispness. These savory pies deliver a flaky crust with a rich, cheesy filling.

Description

Tiropitakia showcases the layering of delicate phyllo dough wrapped around a moist, flavorful cheese and bacon filling. The cheeses—feta for saltiness and tang, Gruyere for nuttiness, and cream cheese for creaminess—create a balanced, rich interior. Small bacon pieces add savory depth and texture contrast.

The dough strips are carefully buttered and folded repeatedly into neat triangles, which crisp up in the oven to a flaky golden crust. Sesame and black sesame seeds on top add a fragrant, toasty note. The egg wash helps achieve a glossy, appealing finish.

These cheese pies can be served warm as appetizers, snacks, or part of a mezze selection. Their handheld size and sturdy shape make them practical for parties or casual meals.

Keeping unused phyllo sheets and assembled triangles covered with a damp towel prevents drying and brittleness while working. Baking until golden ensures a crisp exterior without overcooking the filling.
