Greek Chicken Marinade
Description
This Greek Chicken Marinade combines olive oil and Greek yogurt to create a creamy base that helps tenderize and flavor the chicken breasts. Garlic powder adds savory depth, while fresh lemon juice and zest brighten the marinade with citrus notes. Fresh herbs—thyme, rosemary, and parsley—provide aromatic earthiness, complemented by dried oregano for a classic Greek flavor profile. Salt and pepper season the mix to taste and help balance the flavors. Chicken breasts are coated in this marinade and left to soak for at least 20 minutes up to 2 hours, which allows the meat to absorb the flavors and stay moist during grilling. Grilling the chicken over medium-high heat with oiled grates ensures a slightly charred exterior while maintaining juiciness inside. Resting the chicken after cooking helps retain its juices and makes it tender when sliced. The result is a flavorful, herb-infused grilled chicken well suited for serving with salads, rice, or vegetables.
Using an instant-read thermometer ensures the chicken is safely cooked to 165°F. Leftover chicken can be refrigerated in an airtight container for up to five days.
Ingredients
- 4 chicken breast
- 1/3 cup olive oil
- ¼ cup yogurt plain, Greek
- 1 teaspoon garlic powder
- 2 lemon juiced, plural
- 1 lemon zest
- 1 Tablespoon thyme chopped, fresh
- 2 teaspoons oregano dried
- 2 teaspoons rosemary chopped, fresh
- 1 Tablespoon parsley chopped, fresh
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- In a large bowl, whisk together all the ingredients except for the chicken. Mix well to combine.
- Add the chicken to the bowl and make sure that it’s covered with the marinade. Marinade the chicken for at least 20 minutes or up to 2 hours.
- Then preheat your grill over medium high heat (approximately 400 degrees F). Rub oil on the grill grates to prevent the chicken from sticking to the grill. Place the chicken directly on the grill grate and cook for 6-7 minutes per side until the chicken reaches an internal temperature of 165 degrees F.
- Remove the chicken from the grill, let the chicken rest for 5 minutes. Then the chicken is ready to slice, serve and enjoy!
Notes
- Use an instant-read thermometer to check the chicken’s internal temperature reaches 165°F for safety.
- Store leftover grilled chicken in an airtight container in the refrigerator and consume within 5 days for quality and safety.
