Ingredients

  • 4-6 chicken thighs bone-in, skin-on
  • 1 zucchini sliced
  • 1 red bell pepper cut into 1-inch slices
  • 1 orange bell pepper cut into 1-inch slices
  • 1 red onion thinly sliced into wedges
  • 1 cup cherry tomatoes
  • 1/2 cup kalamata olives pitted
  • 1/4 cup feta cheese
  • fresh parsley for garnish

Greek Marinade Ingredients

  • 3/4 cup olive oil
  • 1 lemon juiced
  • 1 Tablespoon minced garlic 
  • 2 teaspoons dried thyme
  • 2 teaspoons Greek seasoning blend
  • 2 Tablespoons Dijon mustard

Instructions

  1. To Prep: Wash and chop vegetables. Preheat oven to 420°F.
  2. Whisk together marinade ingredients in a medium bowl.
  3. Place chicken in a large bowl and pour in half of the marinade. Toss to coat and chill in the fridge for 15 minutes while oven preheats.
  4. Spray a baking sheet with non-stick cooking spray. Arrange the vegetables on the pan and cover with remaining marinade.
  5. Add chicken to the baking pan with veggies. Bake for 30 minutes, remove from oven to add olives and sliced lemons, then place the pan back in the oven and bake for 10 more minutes.
  6. Garnish with feta cheese crumbles and fresh parsley.
