Greek Deviled Eggs

Olive oil and red wine vinegar are used in place of mayo and mustard with fresh oregano in this Greek Deviled Eggs recipe. Paleo and Whole30 compliant!

Ingredients

  • 6 hard boiled eggs
  • 1 teaspoon chopped fresh oregano or 1/2 teaspoon dried, plus more for garnish
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons red wine vinegar
  • salt and pepper to taste
  • 2 kalamata olives sliced

Instructions

  1. Slice the eggs in half, wiping knife each time on a towel in order to keep the whites clean, and place yolks in a small mixing bowl.
  2. Mash the yolks with a fork.
  3. Add the oregano (1 teaspoon fresh), olive oil (2 tablespoons), vinegar (2 teaspoons), and salt and pepper. Mix thoroughly.
  4. Distribute the yolk mixture evenly back into the egg whites.
  5. Garnish with a sliced olive and some fresh oregano, and add a little more salt and freshly ground pepper as well.
