Greek Lentil Salad

This delicious, hearty Greek Lentil Salad recipe is packed with nutrients and protein from the lentils, and all the delicious flavors of a Greek salad.

Ingredients

Servings
  • 1 cup lentils Bob’s Red Mill brand
  • ½ English cucumber long
  • 1 red bell pepper large
  • 2 tomato medium
  • 1 red onion medium
  • 1/3 cup feta cheese
  • ½ cup chives
  • ¼ cup dill fresh
  • ¼ cup basil fresh
  • 2 mint 3 tbsp, fresh
  • 4 - 6 tbsp Greek salad dressing
  • 2 tsp salt sea salt
  • 1 tsp black pepper

Instructions

  1. Prepare your lentils, cooking it to the instructions on the Bob’s Red Mill bag or your preferred doneness. 
  2. Drain and rinse the lentils with cold water. Set aside. 
  3. Make the Greek Salad Dressing. Set aside.
  4. Dice the cucumber, red pepper, tomatoes, and red onion to resemble the size of one or two peas.
  5. Finely chop the chives, dill, basil, and mint.
  6. Add the cooled lentils, diced vegetables, and chopped herbs to a large bowl.
  7. Pour the dressing over top and toss the ingredients together.
  8. Season to taste and ENJOY!
