Greek Zucchini Fritters
Description
The preparation starts by shredding zucchini and pressing out excess moisture to avoid sogginess. The zucchini is combined with eggs to bind, then mixed with panko breadcrumbs for texture and crumbled feta cheese for sharp, salty flavor. Fresh green onion, parsley, dill, and mint bring herbal complexity. Lemon zest and grated garlic add brightness and a savory note. The batter is rested briefly to allow moisture to redistribute, helping the fritters hold shape.
Portions are scooped, shaped, and baked at 400°F on a lined baking sheet. They bake first on one side then flipped to brown evenly, resulting in crisp edges and moist centers. The herby and cheesy fritters are flavorful with a balanced lemon and garlic profile.
These fritters are best served warm and can complement Mediterranean meals, salads, or grilled dishes. Baking rather than frying yields a lighter version while maintaining texture.
Ingredients
- 2 cups zucchini squeezed of water then measured to 2 cups, shredded
- 2 large egg
- 1 cup panko breadcrumbs
- 1 cup feta cheese crumbled
- ¼ cup green onion minced
- 2 tablespoons parsley fresh, minced
- 1 tablespoon dill minced fresh
- 1 tablespoon mint minced, fresh
- 2 teaspoons lemon zest
- 2 teaspoons garlic grated
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 400 degrees F and line a baking sheet with parchment paper or silicone liner, set aside.
- In a large mixing bowl add squeezed zucchini and eggs. Mix together until combined.
- Add all the remaining ingredients and stir to combine. If the mixture is a little dry let it rest for about 5 minutes to let the zucchini give off a little more moisture.
- When the mixture is ready (it will appear to be very pasty) use a tablespoon and measure out fritters, roll into a ball and flatten slightly. Place onto the prepared baking sheet.
- Bake for 15 minutes, flip the fritters over and bake for another 15 minutes.
- Serve warm.
