Greek Zucchini Noodle Salad
Description
The Greek Zucchini Noodle Salad features zucchini noodles providing a crisp, low-carb base. Accompanied by halved grape tomatoes, sliced English cucumber, black or green olives, and crumbled basil and tomato-flavored feta, it includes traditional Greek salad elements. Fresh basil adds aromatic notes.
The accompanying dressing of red wine vinegar, olive oil, lemon juice, herbs de Provence (or thyme), salt, and black pepper adds acidity and herbal complexity. Tossing the salad just before serving preserves the zucchini's crispness and freshness of the vegetables. Ingredients
- 2 zucchini spiralized
- ½ cup grape tomato halved
- ½ cup cucumber English variety, sliced
- ½ cup olives black or green
- ½ cup feta cheese Athenos basil and tomato, crumbled
- ¼ cup basil fresh
Greek Dressing
- ⅓ cup red wine vinegar
- ½ cup olive oil
- ½ lemon juiced
- 1 teaspoon herbs de Provence or thyme
- salt to taste
- black pepper to taste
Instructions
- Toss all salad ingredients in a large bowl.
- Add all dressing ingredients to a jar and shake well. Taste and adjust salt and pepper to taste.
- Dress salad right before serving. Garnish with more fresh basil.
