  • 2 zucchini spiralized
  • ½ cup grape tomato halved
  • ½ cup cucumber English variety, sliced
  • ½ cup olives black or green
  • ½ cup feta cheese Athenos basil and tomato, crumbled
  • ¼ cup basil fresh

Greek Dressing

  • cup red wine vinegar
  • ½ cup olive oil
  • ½ lemon juiced
  • 1 teaspoon herbs de Provence or thyme
  • salt to taste
  • black pepper to taste

Instructions

  1. Toss all salad ingredients in a large bowl.  
  2. Add all dressing ingredients to a jar and shake well.  Taste and adjust salt and pepper to taste. 
  3. Dress salad right before serving.  Garnish with more fresh basil.
