Butter and flour are combined to make a roux, to which milk and the green beans are added creating a creamy sauce that thickens on the stove. Gruyere cheese adds a nutty, melty richness.

Layered in an oven-safe dish and topped with a mixture of grated gruyere and crispy fried onions, the casserole bakes until bubbly and browned. After resting, the dish is served warm with a combination of creamy, tender, and crisp textures in flavors balanced by salt and pepper.

  • 1 lb Green bean trimmed, fresh
  • 1 lb portobello mushrooms sliced
  • 2 onion sliced
  • 2 tablespoons parsley chopped
  • 4 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 1 cup gruyere cheese grated
  • 3.5 oz fried onions crispy
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat oven to 400 Degrees Fahrenheit 
  2. In a large microwave-safe bowl place the Green Beans with 2 teaspoons of water, salt, and pepper. Microwave for 2-3 minutes or until cooked. Place them in cold water to stop cooking, drain and set aside
  3. In a large wide mouth skillet, melt the butter over medium heat. Add the mushrooms and cook for 2-3 minutes or until softened
  4. Add the onions, parsley, salt, and pepper and cook until the onions have softened. About 5 minutes. 
  5. Pour in the flour and cook while stirring for 1 minute or until the flour has cooked
  6. Add in the milk and the green beans and mix until the sauce has thickened. Check for seasoning and add more salt and pepper if needed
  7. Place this mixture in an oven safe dish 
  8. In a small bowl mix the onions and the cheese. Sprinkle them over the green bean mixture
  9. Bake for 15-18 minutes or until browned and bubbly
  10. Remove from heat and let it sit for 5-10 minutes before cutting
