Description
This recipe starts with placing boneless skinless chicken breasts in the slow cooker and covering them with chopped canned green chiles and seasonings including garlic powder, ground cumin, salt, and pepper. The chicken is cooked on high heat for three hours until tender. After partially shredding the chicken in the cooker, cream cheese is added and melted into the mixture during an additional half hour of cooking on low, lending a rich and creamy texture.

Ingredients
- 3 chicken breast about 2 lbs, boneless skinless
- 2- 4.5 oz green chiles I prefer Old El Paso, chopped, canned
- 1 tsp garlic powder
- 1/2 tsp cumin ground
- 1/2 tsp salt
- 1/2 tsp black pepper ground
- 8 oz cream cheese (1 package)
Instructions
- Lay the chicken breasts flat on the bottom of the slow cooker. Cover with the green chilis, garlic powder, cumin, salt and pepper. Cover and set to high for 3 hours.
- At 2.5 hours, open the lid and use forks to shred the chicken and mix it with the juices. Then lay the cream cheese on top of the shredded chicken and replace the lid and continue to cook on low for 30 more minutes.
- When the timer sounds remove the lid and mix the cream cheese into the chicken. Serve hot and enjoy!
Notes
- Freeze raw chicken breasts with green chiles and spices in a bag; cook from frozen on low for 5-6 hours.
- Shred the chicken in the slow cooker about 30 minutes before cooking is done, then add cream cheese to melt and incorporate.
- This dish can be served hot as is or used in tacos, burritos, or over rice for a versatile meal.
