Green Chili Pork Carnitas Tacos

These Green Chili Pork Carnitas Tacos feature tender pork loin slow-cooked with diced onions, jalapeños, and canned green chilies, infused with cumin, garlic salt, and fresh citrus juices. The pork is seared before slow cooking to develop a browned crust, then shredded to provide a juicy, flavorful filling. Served in warm corn tortillas and topped with queso fresco, avocado or guacamole, and cilantro, the tacos offer a balance of spicy heat and creamy freshness that suits casual meals or gatherings.

Description

Green Chili Pork Carnitas Tacos combine seared pork loin roasted slowly with diced onions, jalapeños, canned green chilies, and a spice mix of cumin, garlic salt, and black pepper. The slow cooking is done with fresh orange and lime juice, which tenderizes the meat and adds bright citrus notes. Shredding the pork after cooking creates tender, bite-sized pieces perfect for stuffing into corn tortillas. The topping of crumbly or shredded queso fresco or pepper jack cheese, creamy avocado slices or guacamole, and fresh chopped cilantro brings layers of creaminess and herbal brightness.

The pork is initially seared in oil to form a golden crust, which enhances the overall flavor and texture of the carnitas. After slow cooking in either a slow cooker or Instant Pot, the meat shreds easily. Assembling the tacos with the fresh toppings complements the warm, seasoned pork and brings added textures and colors. Optionally serving with tomatillo salsa can add a tangy, slightly tart contrast.

This recipe is ideal for preparing in advance since the slow cooking tenderizes the pork over hours, allowing the flavors to meld. Leftover carnitas can be stored and reheated for later meals or used in other dishes.
