Grilled Cheese Everything Bagel Breakfast Sandwich
Description
The sandwich begins by slicing an everything bagel and toasting it to provide a slightly crisp shell. Bacon is cooked until crisp by baking or frying. Eggs are fried separately in a hot skillet to achieve crispy edges and cooked to the preferred doneness.
The warm bagel halves are spread with cream cheese and layered with slices of deli cheese, fried eggs, cooked bacon, and fresh spinach leaves. Butter is applied to the outside for grilling the sandwich until the cheese melts, and the bread develops a golden, crispy crust.
Variations include using bagel-thin or regular-sized bagels, mini bagels, or adding grated everything bagel cheese if available. The sandwich can be doubled or multiplied for feeding more people without strict measurements, making it a flexible recipe for breakfast or brunch.
The combination of fresh spinach adds a slight bitterness and freshness, balancing the richness of eggs, bacon, and cheese. This sandwich is hearty enough to serve as a complete meal.
Ingredients
- 1 everything bagel (bagel-thin or regular)
- 1-2 lices Bacon
- 2 egg
- 2 TBSP cream cheese
- 1 lice deli cheese of your favorite
- spinach fresh, a handful
- butter as needed, for grilling the sandwich
Instructions
- Slice bagel in half and set aside.
- I like to use those super thin bagel-thin bagels since they're so easy to eat sandwich-stye. Feel free to use a regular bagel if desired or you can even use mini bagels. Whatever bagel you love is the bagel to use!
- Next begin cooking bacon via your favorite method (I bake mine on parchment paper but you could also fry it up on a skillet if you prefer)
- While the bacon cooks, fry your eggs or cook via method of choice.
- For cirspy fried eggs, heat a large cast iron skillet to medium-high heat with a little oil or butter. Crack your eggs into a small bowl, then pour into the pan, separate from one another. Cook for a few minutes until your idea of drippy egg perfection is reached. Covering the pan halfway through cooking [after about a minute or two] helps cook the top of the egg and is my go-to technique for a perfect fried egg!
- Toas your bagela and spread with cream cheese. Top with sliced cheese, eggs, bacon, and spinach. If you have one handy, you can press the sandwich using your favorite panini press for a melty breakfast grilled cheese that will rock your morning! There's no wrong way to make an egg sammie; just make one! This bad boy is straight up delicious!
