Grilled Chicken Fajitas
Description
Grilled Chicken Fajitas start with a marinade combining olive oil, lime juice, garlic, smoked paprika, chili powder, and other spices to infuse the chicken breast, bell peppers, and red onion wedges. Marinating for at least one hour allows the flavors to meld and tenderizes the chicken. On a medium-high grill, the chicken cooks for 5-6 minutes per side while the peppers and onions take slightly less time, developing a charred exterior and softened interior.
The vibrant mix of bell peppers and onions grilled alongside the chicken adds sweet and smoky notes that complement the zesty marinade. Sprinkling chopped cilantro over the sliced ingredients before serving introduces a fresh herbal accent. Wrapped in warm tortillas with sides like guacamole, sour cream, cheese, and salsa, these fajitas offer a satisfying combination of textures and flavors in every bite.
This recipe works well on various grills including indoor grill pans, gas grills, or charcoal grills, and you can customize by choosing bell pepper colors for differing sweetness levels. Pairing the cooked meat and veggies with classic Mexican-style condiments makes these fajitas a versatile and hands-on meal option for gatherings or family dinners.
