This Grilled Melon Salad with Prosciutto and Burrata is a light dinner perfect for a hot summer day!

Ingredients

Servings

For The Salad:

  • 6 cups arugula baby
  • 1 - 2 pounds melon such as cantaloupe or watermelon cut into 1 and a half to 2 inch thick slices
  • 4 ounces burrata cheese torn into bite sized pieces
  • 3 ounces prosciutto
  • 1/4 cup pistachio optional, chopped, toasted

For The Dressing:

  • 1 tablespoon balsamic vinegar golden
  • tablespoons olive oil
  • 1/2 teaspoon oregano dried
  • salt to taste
  • black pepper to taste

Instructions

To Make The Dressing:

  1. Whisk together all ingredients or put them in a tightly sealed mason jar and shake until well combined.

To Grill The Melon:

  1. On a hot grill, sear melon slices 1-2 minutes per side, until they have grill marks.

To Assemble The Salad:

  1. On a large platter, arrange arugula. Top evenly with prosciutto, burrata and melon slices. Sprinkle pistachios on top, then drizzle with dressing.

Notes

  • *If you can't find burrata, you can use fresh mozzarella**If you can't find golden balsamic vinegar, you can use regular balsamic vinegarYou can use a regular grill or a grill pan for the melon
