Grilled Stuffed Avocados

Adapted from Jessica Levinson from NutritiouliciousGrilled avocados are the perfect vehicle for serving up a delicious corn and black bean salsa in this easy and nutritious vegetarian dish.

Ingredients

Servings

Corn & Black Bean Salsa:

  • 1 cup corn I grilled fresh corn on the cob and cut the kernels off, fresh or thawed frozen
  • 1 cup black beans drained and rinsed, no-salt added
  • 1 cup diced tomatoes
  • cup red onion diced
  • 1 ½ tablespoons jalapeno pepper minced
  • 2 tablespoons lime juice
  • ¼ cup cilantro chopped
  • ½ teaspoon kosher salt
  • ¼ teaspoon cumin ground

Avocado Cilantro Yogurt Sauce:

  • ½ avocado peeled and pitted
  • ½ cup Greek yogurt low fat, plain
  • 2 tablespoons cilantro
  • 1 tablespoon lime juice
  • teaspoon kosher salt
  • ¼ teaspoon hot sauce optional, like Sriracha

Grilled Avocados:

  • 2 avocado halved and pits removed, medium to large
  • 1 teaspoon olive oil
  • kosher salt

Instructions

  1. Combine all of the salsa ingredients in a medium bowl. Let sit at room temperature for about 30 minutes for flavors to meld together.
  2. To make the sauce, puree the avocado, yogurt, cilantro, lime juice, salt, and hot sauce together in a mini food processor or blender.
  3. Heat a grill or grill pan to medium high heat. Brush avocado halves with oil and sprinkle with a pinch of salt. When grill is hot, place avocado halves cut side down on the grill and cook 2-3 minutes until nice grill marks form. Remove from heat.
  4. Fill avocados with some corn and black bean salsa. Drizzle some Avocado Cilantro Yogurt Sauce on top and garnish with cilantro.
  5. Serve extra salsa and sauce on the side. You can also mix the extra salsa with cooked quinoa for a tasty second dish!
