Ground Beef Enchiladas

Ground Beef Enchiladas combine seasoned ground beef and optional pinto beans with a rich enchilada sauce and melted Monterey jack and cheddar cheeses, all rolled in corn tortillas. The beef filling simmers until thick and flavorful, then is rolled in soft tortillas topped with sauce and cheese before baking. The dish is savory with melted cheese and a tender texture from baking.

Description

Ground Beef Enchiladas bring together ground beef cooked with diced onions and garlic, combined with pinto beans and taco seasoning to create a hearty filling. The filling is thickened with a bit of enchilada sauce and water before being rolled into warmed corn tortillas and placed in a baking dish. Topped with more enchilada sauce and a blend of shredded Monterey jack and cheddar cheeses, the enchiladas bake uncovered until the cheese melts and the filling is heated through, resulting in a comforting, savory casserole with a cheesy crust.

The enchiladas offer a mildly spiced and creamy texture thanks to the cheese and sauce, with the filling providing the main savory component. They can be served as a main dish for lunch or dinner, suited for a casual family meal.

Heating the tortillas until soft helps prevent cracking when rolling. Allowing the dish to cool slightly before serving helps the filling set and makes serving easier.
