Ground Horseradish Recipe

A prepared ground horseradish condiment to serve with your food or to mix into sauces. This is a basic DIY Vegan version.

  • 3.5 ounce fresh horseradish fresh, *see Notes
  • 3 Tablespoon vinegar *see Notes
  • 1 Teaspoon sugar *see Notes
  • ½ Teaspoon salt
  • 5 Tablespoon oil *see Notes

Instructions

  1. Scrub and wash your horseradish root. It should be clear of mud and dirt.
  2. Cut tender pieces off. Use only tender pieces, don't use fibrouse wood-like horseradish pieces.
  3. Peel horseradish and cut into chunks.
  4. Place horseradish chunks into a food processor with salt, sugar, vinegar, and oil.
  5. Grind to a fine or coarse horseradish condiment.
  6. Store in a clean jar. Keep in the fridge until further use or freeze (see storing instructions in post)

Notes

  • Weigh your fresh horseradish from the best tender parts only, after cutting and peeling the root pieces.
  • I use white wine vinegar or apple cider vinegar. Rice vinegar is suitable too.
  • You can use plain regular sugar or brown sugar.
  • You can use vegetable oil, sunflower oil, or canola oil.
  • Store in smaller air-tight containers if you want to free it. That way they will thaw faster through and you can use each, batch by batch as needed.
