Guasacaca is Venezuela's version of guacamole. It's vibrant, fresh and bursting with delicious flavor! The recipe includes avocados, lots of fresh herbs, green pepper, jalapeño, vinegar and fresh lime juice.

Ingredients
- 2 avocado seeded (I use Haas, large, ripe
- ½ onion halved, medium
- 1 bell pepper seeded and quartered, small, green or yellow
- 1-2 jalapeño stemmed and seeded, medium
- 2 garlic medium cloves
- 1 cup cilantro tightly packed, fresh
- ½ cup parsley tightly packed, fresh
- 2 tablespoons rice vinegar
- 3 tablespoon lime juice or more, fresh
- 1 tablespoon olive oil
- ½ teaspoon kosher salt more to taste
- ¼ teaspoon black pepper freshly ground
Instructions
- Combine all ingredients except olive oil in the bowl of a food processor. Process until fairly smooth. (If you prefer a chunkier texture, use the pulse button until desired consistency is achieved.)
- Transfer to a bowl and add olive oil. Stir until oil is completely incorporated.
- Taste and add more salt, pepper, lime juice or vinegar, if desired.
